Oreo Surprise Chocolate Cupcakes
I'll admit it...I've fallen down on the job. Or should I say on my husband's job? Or at my husband's job? Hmm...semantics.
Ingredients
1 (18.25 ounce) package chocolate cake mix
1 (8 ounce) package cream cheese, softened
1 egg
2 tablespoons sugar
48 Mini OREO Bite Size Cookies
1 1/2 cups thawed whipped topping
1. Preheat oven to 350 degrees. Spray 24 cupcake cups with nonstick spray or use 24 paper liners. Prepare cake batter as directed on package. Then mix the cream cheese, egg and sugar until blended and smooth.
I love taking treats into the directors who work at the funeral home with Danny. They're always so appreciative and I get to spoil them with fun new things. But I hadn't done it for a while and that had to be remedied.
There are many variations of recipes for this adorable Oreo chocolate cupcake all over the place. Each one is a little different, so I combined bits and pieces from each one and made this lovely variation on something so wonderful. Perfect for sharing. Enjoy!

1 1/2 cups thawed whipped topping
1. Preheat oven to 350 degrees. Spray 24 cupcake cups with nonstick spray or use 24 paper liners. Prepare cake batter as directed on package. Then mix the cream cheese, egg and sugar until blended and smooth.
2. Spoon cake batter into each cup, filling them about half full. Top each with about 1/2 Tbsp. of the cheesecake and 1 cookie. Use the remaining batter to lightly cover the cheesecake and cookie. (The batter will cook up and around the filling.)
3. Bake 19 to 21 minutes or until a toothpick inserted in center comes out clean. Cool for 5 minutes and then remove to wire racks. Cool completely - this is very important.
4. Top cupcakes with whipped topping and remaining cookies when you're ready to serve.
