Strawberry Cheesecake Bites
One final post on the Valentine theme! I just had to share this special treat with you that I made for family and co-workers Tuesday.
This was actually not the idea I started out with. I had seen a beautiful picture of a strawberry turned upside down, split and filled with cheesecake filling. They looked yummy and so gorgeous lined up on a silver tray. I thought that would be just lovely to try.
But none of the grocery stores in town had whole strawberries with the leaves still on. Something about being out of season and Valentine's Day. Hmph...
So, Plan B. I found a container of cut strawberries, some smaller than others, and they were the prettiest shade of red. I cut them into quarters and let them come to room temperature. There's nothing I hate more than cold, hard food.
I also picked up a box of vanilla wafer cookies and a container of cheesecake filling. Yes, it took all of my willpower not to swim in the stuff. It is absolutely delectable! Look for it in the refrigerator section by the cream cheese.
So one cookie, a dollop of cheesecake filling and a wedge of strawberry. You could change up the fruit to whatever is seasonal, and you can put any small cookie on the bottom that you'd like as well. This combination was perfect for Valentine's Day.
And I'm not just saying that. The press room guys at the newspaper went through them like they hadn't eaten in weeks. I had to fight my way out with a couple just so I could have them myself. In between mouthfuls I believe they said they were delicious. You can either take the word of our pressmen or try them for yourselves.
