Chocolate Chip Banana Bread
When Danny texts me at work to tell me he has a surprise for me, it makes my day. When it's his day off and he texts me at work to tell me he has a surprise for me, it's even better.
Last week, that surprise was an amazing banana bread adapted from his granddaddy's recipe. Those almost-dead bananas on the counter went to an incredibly good cause.
I'm blessed beyond measure.
This recipe makes enough for two full-sized loaves of bread.
Ingredients:
1 cup shortening or 2 sticks of margarine
2 cups sugar
4 eggs, beaten
6 over-ripe bananas
4 cups flour
1 1/2 tsp baking soda
1/2 tsp salt
1 cup miniature semi-sweet chocolate chips
1. Preheat oven to 300 degrees.
2. Mash up the butter with a spoon. Add the sugar, eggs and bananas, using a whisk to mix well.
3. Add dry ingredients and blend well. Be careful not to over mix.
4. Bake in 2 well-greased and floured loaf pans for 1 1/2 to 2 hours.
You can also substitute 1 cup of nuts if you'd rather not have chocolate.
