Apple Cinnamon Oatmeal Muffins
I especially enjoy recipes that use up pantry ingredients. You know, those staples that you almost always have one hand. There's nothing more frustrating than finding a great recipe and having to run to the store because it calls for something out of the ordinary.
That's why I love these special oatmeal muffins. You probably have everything you need to make them right this minute in your pantry - go check!
Ingredients:
1 1/2 cups flour
1/2 cup quick oats
1/3 cup packed brown sugar
1/3 cup sugar
1 Tbsp cinnamon
2 tsp baking powder
1/2 tsp salt
2/3 cup milk (I used almond)
1/2 cup oil
2 eggs
1 tsp vanilla
1 1/2 cups apples, diced
1. Preheat oven to 400 degrees. Spray a muffin pan with nonstick spray.
2. In a large bowl, combine all of the dry ingredients.
3. Add the milk, eggs, oil and vanilla. Stir until well combined.
4. Fold in the diced apples.
5. Fill muffin tin 2/3 full with batter. Bake at 400 degrees for 15-20 minutes, or until a toothpick comes out clean.
6. Cool muffins in the pan for 5 minutes before removing to wire rack to finish cooling.
