Chocolate Marshmallow No-Bake Cookies

There are two great ways to make these candy-like no-bake cookies. You'll just have to choose the one you like the best - or make one of each every time!

Version #1 will give you streaked, marble-like cookies, while version #2 will give you chunks of marshmallow and chocolate.

Ingredients:
16 oz (8 squares) almond bark
1 16-oz jar creamy peanut butter
2 cups puffy rice cereal
2 cups mini marshmallows
1 cup mini chocolate chips (frozen)

Version #1:
1. Cover two baking sheets with parchment paper.

2. Melt the almond bark in a microwave-safe dish in 30-second intervals, stirring after each one.

3. Stir peanut butter into melted almond bark. The peanut butter will melt and stir in easily.

4. Combine melted melted mixture and cereal in a large bowl.

5. Add marshmallows and stir until smooth.

6. Add chocolate chips and stir until smooth.

7. Allow mixture to cool until room temperature.

8. Scoop out balls of dough and place on prepared sheets. Put in refrigerator until completely firm. Serve immediately or store in air-tight container in refrigerator.


Version #2:

6. Fold in marshmallows.

7. Fold in frozen chocolate chips.

8. Scoop out balls of dough and place on prepared sheets. Put in refrigerator until completely firm. Serve immediately or store in air-tight container in refrigerator.
