Slow Cooker Chicken Teriyaki
In the nasty heat of an Iowa summer, I love throwing some great ingredients into a slow cooker and forgetting about it until suppertime. It may be lazy, but in the hazy days of August it's totally worth it.
There's no need to heat the stove or oven, and the kitchen still smells like I slaved away over this amazing chicken dinner. Try it and see for yourself.
Ingredients:
8 chicken drumsticks
1/2 cup honey
1/2 cup soy sauce
1/4 cup red wine vinegar
1/4 cup water
2 Tbsp minced garlic
1 tsp ground ginger
1 tsp onion powder
2 Tbsp corn starch
salt and pepper to taste
1. Turn slow cooker on to high. Arrange drumsticks in cooker.
2. Combine all other ingredients in a large bowl and mix well. Pour over chicken.
3. Cook on high one hour, then reduce heat to low and cook 5-6 additional hours. OR cook on low 8-9 hours.
4. Remove from cooker and allow to rest. Serve with veggies or salad.
