Lemon Baked Tilapia
In an effort to clear out the refrigerator and pantry before stocking up on groceries again, I found a package of tilapia fillets in the very back of the freezer. I had forgotten all about them after taking the first few out, putting new frozen foods to the front.
Fish and citrus are an amazing combination, so tilapia and lemon are the perfect marriage for a lovely dinner. You can buy individually wrapped fish fillets at the grocery store, so pick up a few on your next trip, along with a couple of fresh lemons, and enjoy this tasty meal.

Ingredients:
4-6 tilapia fillets
Salt and pepper to taste
4 slices fresh lemon
1/4 cup (half a stick) melted butter
2 Tbsp minced garlic
2 Tbsp fresh lemon juice
2 Tbsp fresh lemon zest
1 Tbsp parsley flakes
1. Preheat oven to 450 degrees. Lightly spray a 9x13 inch glass baking dish.
2. Place fillets into dish and season with salt and pepper.
3. Cut four slices off one lemon. Then zest the remaining lemon and juice it.
4. In a medium bowl, mix the butter, garlic, lemon juice and zest. Pour over fish. Top with sliced lemon.
5. Bake at 450 degrees for 10-12 minutes, until fish is baked through and flaky.
6. Garnish with parsley and serve with tartar sauce.
