Strawberry Streusel Banana Bread
Overly ripe bananas? Check. Beautiful red strawberries? Got them. A well-stocked pantry for the baking essentials? Yep.
That's all you need to make a moist, decadent strawberry banana bread that's absolutely delicious. Be prepared, though. You might need to make more than one loaf!
Bread ingredients:
1 cup flour
1 tsp baking soda
pinch of salt
3/4 cup sugar
1/2 cup butter, melted
1/4 cup buttermilk
1 Tbsp vanilla
1 egg, beaten
1 egg yolk
Streusel ingredients:
1/4 cup flour
1/8 cup sugar
1/4 cup butter, softened
pinch of salt
1. Preheat oven to 350 degrees. Spray a 5x9 inch loaf pan with nonstick spray.
2. In a medium bowl, mix flour, baking soda and salt.
3. In a separate bowl, combine sugar, butter, buttermilk, vanilla, egg and egg yolk.
4. Add milk mixture to dry ingredients, stirring until combined.
5. Add strawberries and bananas.
6. Pour batter into prepared loaf pan.
7. For streusel topping, mix flour, sugar and salt. Cut in the softened butter until large crumbs form.
8. Sprinkle topping over the bread mixture in loaf pan.
9. Bake at 350 degrees for 60 minutes. The topping will be browned and a cake tester will come out clean.
