Beef And Sweet Potato Bowl

This simple, tasty bowl is ready in less than 30 minutes, and the seasonings and spices can be switched up to your personal taste. It can also daily be doubled or tripled for a large group.
Ingredients:
2 large sweet potatoes, diced
2 Tbsp olive oil
2 Tbsp lime juice
2 tsp chili powder
1/2 tsp cumin
Salt and pepper
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 tsp paprika
1 tsp chili powder
1 tsp oregano
1 green onion, sliced
1. Preheat oven to 425 degrees. Cover a baking sheet with foil and spray with nonstick spray.
2. In a large bowl combine sweet potatoes, olive oil, lime juice, chili powder, cumin, salt and pepper. Toss to coat.
3. Roast sweet potatoes at 425 degrees for 15-20 minutes, stirring halfway through.
4. While sweet potatoes are roasting, brown the ground beef in a cast iron skillet. Add onion, garlic, paprika and oregano. Cook until onion is tender.
5. Remove sweet potatoes from oven, toss gently with ground beef mixture and top with sliced green onion.
