Slow Cooker Pineapple Pork Roast
For the most part, I’m a pretty good follow-the-recipe kind of girl. Unless I’ve put together a dish several times, I’m not too comfortable just throwing stuff together to see what happens. I guess I’m afraid of committing ingredient abuse or something equally silly.
This pineapple pork, though, came from using three ingredients and some spices to make a delightful dinner we’ll definitely repeating soon. All I did was grab two things from the pantry and one from the freezer and put them all together to cook for 8 hours. Yes, it’s as easy as that!
For my spice rub, I used a pulled BBQ rub specially made for pork, brisket and chicken. You can also make your own rub by combining brown sugar, chili pepper, garlic powder, onion powder and paprika to taste.
Ingredients:
3-4 pound bone-in pork butt
1 20-oz can pineapple chunks
1 18-oz bottle honey BBQ sauce
Pulled BBQ Seasoning mix
1. Pour 1/3 of the BBQ sauce and 1/3 of the pineapple juice from the can into the bottom of your slow cooker. Turn it on low.
2. Coat both sides of the pork with seasoning rub and place in slow cooker.
3. Pour remaining BBQ sauce over pork, then slowly pour remaining pineapple juice and pineapple chunks over the pork.
4. Cook on low for 8 hours or until meat is cooked through.
