Slow Cooker Meatball Soup

Cold hands, warm heart, right? If the winter days are chilly where you are, I've got just the thing. January is a great time to warm things up with a slow-cooker soup. This meatball soup is the perfect recipe for being gone all day - come home and it's ready to serve.

I don't have much experience making my own soup, but this one was so quick and easy that I'm ready to try some other flavor combinations. I served mine with a side of conbread - how would you serve yours?

Ingredients:
2 16oz bags of frozen Italian meatballs
2 16oz cans beef broth
1 cup water
1 14.5oz can diced tomatoes with basil, garlic and oregano
1 18oz can cannellini beans
1/2 cup shredded Parmesan cheese

1. Mix meatballs, broth, water, tomatoes and beans in a large slow cooker.

2. Cover and cook on low for 8-10 hours.

3. Serve topped with Parmesan cheese.
